Pork Curry in a Hurry

This recipe came from the pork producers of Nova Scotia, Canada that I got many years ago. I made it for the first time the other day and everyone loved it. It is also very easy to make and great for using left over pork.

As written this recipe does not work with 1 cup stock and 3 tablespoons of flour. It should be corrected. It ends up like glue and you need at least 2 more cups of stock.

  1. In a skillet, saute onion, red pepper, celery, and peanuts in butter.
  2. Stir in flour, then add stock.
  3. Add chutney, curry, salt, pepper, and sugar. Simmer 10 minutes, or until thickened, stirring often.
  4. Add the apple wedges and cooked pork and heat thoroughly.
  5. Serve with hot rice.
