- 4.92 ml canola oil
- 1 onion, chopped
- 1 green bell pepper, seeded and chopped
- 2 garlic cloves, minced
- 709.77 ml reduced-sodium chicken broth
- 411.06 g can diced tomatoes with mild green chilies
- 283.49 g package frozen corn kernels, thawed
- 4.92 ml chili seasoning mix
- 354.88 ml cooked chicken breasts, chopped
- 59.14 ml fresh cilantro or 59.14 ml fresh parsley, coarsely chopped
- 8 large baked corn tortilla chips, coarsely broken up
directions
- Heat the oil in a large nonstick saucepan over medium-high heat.
- Add the onion, bell pepper and garlic; cook, stirring frequently, until softened and lightly browned, about 5 minutes.
- Add the broth, tomatoes, corn and chili seasoning mix; bring to a boil over high heat.
- Add the chicken and cilantro or parsley.
- Reduce the heat and simmer until heated through, about 2 minutes.
- Serve with tortilla chips.
