- 1⁄3 cup olive oil
- 2 teaspoons Dijon mustard
- 1⁄3 cup fresh lemon juice

- 3 cups farfalle pasta, cooked
- 1 cup cooked shrimp, peeled
- 1⁄2 cup cherry tomatoes, cut in half
- 1 lb Baby Spinach, washed drained
- 2 shallots, minced
- 1 avocado, peeled, chopped
- 1⁄4 cup feta
directions
- For the dressing, mix olive oil, Dijon mustard, and lemon juice together. Set aside.
- Mix cooked pasta, shrimp, cherry tomatoes, spinach, shallots, avocado, and feta together; toss.
- Add dressing and toss; serve or chill.
