- 907.18-1360.77 g beef chuck (the same meat for beef stew)
- 59.14 ml extra virgin olive oil
- 396.89 g coconut milk
- 85.04 g tomato paste
- 6 bay leaves
- 1 small yellow onion, diced
- 29.58 ml sugar
- 29.58 ml garlic powder
- 29.58 ml onion powder
- 14.79 ml of minced garlic
- 3 beef bouillon cubes
- 29.58 ml chili powder
- 14.79 ml cayenne pepper
- 14.79 ml crushed red pepper flakes
- 44.37 ml curry powder
- 29.58 ml cumin
- 29.58 ml coriander
- 14.79 ml cracked black pepper
- 14.79 ml powdered ginger
- 14.79 ml kosher salt
- 4.92 ml dried thyme
- 1 cinnamon stick (optional)
- 2.46 ml cinnamon (optional)
directions
- Sprinkle beef with salt & pepper; make sure all sides are well seasoned.
- In a Dutch oven or big pot, heat extra virgin olive oil to where it starts to sheen.
- Add beef to pot and brown on all sides.
- Once meat is browned, DO NOT DRAIN GREASE, lower heat and add coconut milk and HALF a can of tomato paste (3 ounces). Proceed to add the REST of the ingredients, EXCEPT THE ONION.
- ***If you don't like your food VERY SPICEY -- Add the Cinnamon or the Cinnamon Stick -- it will cut the heat down, also a teaspoon of sugar will make it even milder***.
- Simmer for 1 hour & 15 minutes stirring occasionally; add diced onion, continue to cook for 15 more minutes.
- DONE!
- *SERVE WITH JASMINE RICE TO ENHANCE FLAVORS*.

<p><br />All my Friends & Family look forward to any MEAL they can get at my house. I don't know what it is about cooking, but I must say I LOVE it, I have a talent for tasting a dish breaking down the ingredients and being able to copy it at home. <br />I have a tendency to experiment and use friends or family as guinea pigs, but i never let them know it was an experiment until AFTER they have eaten (LOL).</p>
