Granny's Fried Cornbread

ingredients
- 2 cups cornmeal
- 1⁄4 teaspoon salt
- 1⁄4 cup self rising flour
- 1 cup water
- 1⁄4 cup bacon drippings or 1/4 cup cooking oil
- 1⁄2 cup milk or 1/2 cup buttermilk
- 1 egg
directions
- Gently stir together all ingredients in a mixing bowl.
- Drop batter with a large spoon onto a hot, well greased griddle.
- Cook as you would for pancakes, turning to brown both sides.
- Serve with butter.

My mom made fried cornbread all the time. It was a stable at our southern table. However, I never learned to make it. My Mom passed away a month ago after a long battle with Alzheimer's. I wanted to make fried cornbread for new years to eat with the greens. When I googled the recipe, this is the one that came up. I made them and nearly started crying when I bit into one. They taste just like my mothers did and she never used a recipe. My husband ate and afterwards told me to please make them anytime, that they tasted like his beloved grandmother's did. Thank you for this recipe and giving me a wonderful memory to start 2019 with.

Oh yeah, but in my neck of the woods we call them hoe cakes and I can't imagine eating field peas w/ham or greens without them. We also serve them with tomato gravy, fried eggs, grits and ham for breakfast. Any leftover cakes are served with cane syrup for a sweet and yummy after meal treat. This is the same recipe myself, my mom and granny used as well, so I know it's a winner. I urge everyone to try them, as they are great with vegetable soups as well.
