Crockpot Sweet & Sour Chicken

I was out of bottled sweet and sour sauce, so I threw this together instead. We like this even better!

I used Frank's RedHot Sweet Chili Sauce because that's what we had on hand. We cooked the chicken for 4 hours on high, and added a touch of ketchup and ginger as well. The flavor was good, but the chicken was more of a shredded texture. Easy weeknight meal!

  1. Place the frozen chicken in the crockpot and dump the pineapple (WITH the juice) on top.
  2. Scatter the chopped vegetables over the chicken and pineapple.
  3. Whisk together the soy sauce, Thai sweet chili sauce, and the chicken broth, then pour over all.
  4. Cover and cook for 6 hours on low.
  5. Remove chicken to cutting board and cut into slices or cubes.
  6. Return chicken to pot; whisk together the cold water and the cornstarch until smooth, then stir into the pot.
  7. Cover and continue to cook on low for at least 1 hour.
  8. Serve over hot cooked rice.
