This soup was delicious! I left out the bay leeaves and celery because I didn't have any and I used 1% milk. It was yummy and even my daughter, who doesn't like mushroom soup, loved it! Will definitely make it again.

  1. In a 2-quart saucepan, melt butter; stir in flour until smooth.
  2. Gradually stir in broth until smooth.
  3. Add salt, pepper and bay leaves.
  4. Simmer, uncovered, for 15 minutes, stirring occasionally.
  5. Meanwhile, in another saucepan, saute the celery and onion in oil until tender.
  6. Add mushrooms, cook and stir until tender.
  7. Add to broth mixture; bring to a boil.
  8. Reduce heat; simmer, uncovered for 15 minutes, stirring occasionally.
  9. Add cream, heat through.
  10. Discard bay leaves.
