ingredients
- 1 1⁄2 lbs lean ground turkey
- 1 medium onion, finely chopped
- 2⁄3 cup quick-cooking oatmeal
- 1⁄2 cup chopped fresh parsley
- 3 large garlic cloves, minced
- 4 teaspoons cajun seasoning
- 2 egg whites (beaten to blend)
- 2 teaspoons ground cumin
- 1 teaspoon dried thyme
- 1⁄3 cup creole mustard or 1/3 cup another grainy or spicy mustard
directions
- If you don't have a pre-made Cajun spice blend, there are several good ones on this site. Try Cajun Seasoning Mix #14190 or Cajun Seasoning #33092. Look for one that has no added salt.
- Preheat oven to 350°F
- Optional Step: You can ground the oatmeal in the food processor one or two pulses. You are not looking for flour, just bits of oatmeal somewhat smaller than the whole grain.
- Combine all ingredients except mustard in large bowl. Season with salt and pepper.
- Place meat mixture in a nonstick loaf pan.
- Cover and bake 20 minutes. Scrape off any crud that may appear on the surface. Spread top with mustard.
- Bake uncovered another 35 minutes.
- Remove from pan and cut into slices.

I already have a great turkey meatloaf recipe that my family loves - guess it will have to share equal time with this recipe now! This is great! I was concerned about the moistness level of this recipe (I usually add more moistening items) so I did steal from my tried & true recipe by adding 1/2 cup nonfat yogurt. So it was really perfect - nice blend of spices with a little kick as well! I served it with Recipe #167241 .Thanks for the post. ZWT 2007

We had a great dinner tonight! The Cajun seasoning I used (store-bought)was maybe a bit too salty. Next time I'll use a "home-made" (i.e. a Zaar recipe). The structure of the meatloaf was just perfect. Firm, easy to cut, not too dry, not too moist. It was done in exactly the time stated. As some previous reviewers had commented that they upped the spices I thought I'd add a teaspoon of Louisiana Hot Sauce, mmmmmm, gave just the right kick. Thanks for posting.

This ain't your mama's meat loaf! This one has MAJOR FLAVOR! Completely different and a very nice change of pace. NOT spicy but well seasoned with garlic, onions and spices. My family loved this! They did miss their catsup topping- that was the only complaint I heard. I was prepared for that one though. They have been known to turn their noses up when something is different so I covered the mustard topping with turkey back slices- they loved it! They still broke out the catsup bottle but you can't win them all! lol Served with mashed potatoes topped with cheddar cheese and Microwave Lemon Garlic Broccoli Recipe #132765. Thanks Toni for rescuing us from the same old boring meat loaf dinner!

I come from a long line of wonderful cooks and doing my best to hold up that tradition. My great-grandparents owned a coffee shop; my Nana was also a great cook and started the tradition of baking around the holidays, both cookies and fruitcakes. After she died, now a decade ago, our family decided to continue in her honor. The picture above is my mother's (Chef Hot Pans) dining room table just before we packed up our Christmas cookie trays. More that 20 kinds of cookies, many of which are from 'Zaar recipes.

I myself am an amateur cook with a penchant for ethnic foods and spice. Currently reforming my menu in favor of healthy dishes lower in fat with lots of grains and vegetables. My favorite cuisines are Mexican, Southwestern and North African.

Some of my favorite public cookbooks include:
