  • Cook the onions, bell pepper, celery, and garlic in two tbsp of the oil in a Dutch oven, about 3-4 minutes.
  • Add shrimp and cook until shrimp are pink, about 5 minutes.
  • Remove shrimp mixture and reserve.
  • Add last tbsp oil to the pan along with the rice and cook over med-high heat about ten minutes, until the rice is a light brown, stirring frequently to prevent scorching.
  • Stir in the broth, tomatoes, salt, pepper, thyme, Tabasco, and the bay leaf.
  • Heat mixture to a boil then cover, reduce hear and simmer, about 15-20 minutes or until rice is tender.
  • Stir in the reserved shrimp and also the ham.
  • Cover and cook until heated through.
  • Remove bay leaf, and serve.

  1. This is a fantastic recipe I used some Johnsenville Hot and Spicy sausages cut up small then fried, it added a nice flavor through it. I also used cut up prawns and a chicken breast. My husband who is normally fussy about mixing different meats together liked this very much. Will definatly make again.
     
  2. This was one great meal! I didn't use any ham but instead used spicy italian sausage. It was fabulous. Nice spice and wonderful combo of flavors. I will be making this one again for sure!
     
  3. This was a great recipe. I did as most cooks do and put my own spin on it. I also used Johnsonville Sausage but chose Mild. Also, I upped the garlic by 6 or 7 as I increased the recipe for a bigger meal/family. I used 2 cups of rice which doubles the water as well. Additionally, I did not use salt and pepper but chose "Old Bay" Seasoning and added 2 tsp. Then I added 3/4 tsp cayenne pepper as the tabasco sauce I used was that of smoke flavor. If you use regular tabasco you may not need the cayenne pepper. Also I used 1 green and 1 yellow pepper. The next time I make it I will probably add Okra!

  5. This is awesome..... I fixed it a little different.... I fried some minced bacon in a pan and set the bacon aside... I then fried the veggies in with the bacon fat.... My DH loves smoked sausage so I also added some of that cut up and cooked it in the bacon grease.... I then sat all of this aside and followed the rest of the directions from step 2 on.... I did leave out the ham.... we added the bacon and the rest of the ingredients that I used in at step 7 with the shrimp.... You could also dice some chicken and cook and add as well..... Enjoy.....
