  • Melt shortening in a large dutch oven. Add onion, green peppers, and garlic. Cook slowly, stirring often, until tender.
  • Add chicken, ham and sausage. Cook 5 minutes longer.
  • Add tomatoes, uncooked rice, and chicken broth.
  • Add thyme, parsley, chili powder, salt and pepper.
  • Place mixture in a large greased casserole dish, cover, and place in a 350 oven for 50 to0 60 minutes or until rice is done and liquid is absorbed.
