Mom's Pork Casserole

"My mom has been making this since I was a kid. She says she made it up with ingredients on hand. To me it is one of my favorite comfort foods! I adjusted the number of servings based on other comments and the fact that we usually at best serve 4 with it! I will also add as one reviewer noted, the amounts for celery, peas, onion are what my mom used. I often am pretty liberal with all of those."

  • Combine all ingredients and pour into a prepared casserole. Bake, covered at 325^ for 1 1/4 hours.

  1. I came across this while looking for a way to recycle two big fried pork chops. First of all, let me say, this is not the prettiest casserole in the world, but don't let that stop you. It is very yummy. DH had three servings and kept saying how good it was. I left out the optional mushrooms because of picky husband's but served this with colorful steamed veggies and sauteed mushrooms on the side. This is going to be my go to dish for using up those dibs and dabs of leftover meat. Thanks Denise for sharing!

  3. We really loved this. I had a pork rib crown roast and had quite a bit left over. My husband suggested Parma on the top before baking and it was great. The only sub I made was for the soup - I always have cream of mushroom soup but for whatever reason I didn't....grrr....anyway I did have a jar of good Alfredo sauce and it was amazing. Thanks for this one.

  5. This was a basic hearty filling casserole. While we all ate it, everyone said they would not specifically request it, but eat it if served. It was easy to put together, and a good use of leftover pork besides BBQ pork sandwiches, but the family said they would prefer I do mostly the sandwiches instead of this.

  1. I had large pork roast we hadn't finished and went looking for a recipe to use it up. Thank goodness I found yours. I was sick of noodles and rice sounded so much better. I almost didn't rate your recipe because I made quite a few changes. I did use the basic recipe but added modifications: used white and wild rice mixture, added extra celery, onions, broccoli, chicken broth instead of water, garlic, cream of celery soup and a small can of mushrooms instead of fresh. I did double the recipe and it was gobbled up by 6 people. Thanks so much for posting this great, easy to put together casserole. I have added it to my collection of recipes to use for left overs.
     
  2. OMG...you don't know how long I've looked for this recipe. I'm a born and bred North Carolinian but live in Florida now. When I was growing up, my mom made this casserole all the time. She called it "leftover casserole." Instead of mushroom soup, she used onion soup. and whatever meat we had leftover. It's good with beef, pork, chicken or seafood. I lost the recipe years ago and have been looking for it ever since. This is it...and thank you! My five stars are based on many years of eating this comfort food. I can't wait to play around with this recipe, now that I have the proportions. It's a trip down "memory lane" and I thank you for that.

<p>I live in a part of North Carolina that's close enough to Raleigh to commute, but far enough away to seem like another world. I am loving small town living; I spent the first 38 years of my life as a suburbs girl in Florida. I love going to a small church and the fact that in a few years here we almost always run into someone we know when we go into town. I can't imagine living anywhere else now! <br />I work for a major computer storage company keeping one of our larger customers happy from a support (after the sale) perspective. My title doesn't really explain what I do, but the best way I've found to describe my work is that if everyone did what they were supposed to do, I would be out of work! <br />I don't get to cook as much as I'd like to, but when I can, I love to try new recipes! I'm always looking for great make ahead or CrockPot recipes that accomodate my crazy work. I love the feature on 'Zaar where you can find recipes by searching for an ingredient. I've come up with more dinner ideas that way! <br />I'm blessed with a husband who is always willing to try new things, but who is also happy to eat PBJ every night.
