Easy Cinnamon Apple Raisin Bread

"This is an easy and delicious bread to prepare. Even better you only need one mixing bowl because you can throw all of the ingredients right in! Feel free to tweak the ingredients to your liking...add more cinnamon...add nuts, etc. I hope you enjoy it! Edited: I have also tried out the bread by using 1/2 whole wheat pastry flour and 1/2 regular flour, a tbl of wheat germ and less sugar to make it a tiny bit "healthier". It came out just as nice as the original."

  • Preheat oven to 350 degrees.
  • Take peeled and chopped apples and place them in a micowave safe bowl.
  • Add water to the apples and microwave for 1 to 1 1/2 minutes.
  • Combine apples and all remaining ingriendients and mix thoroughly.
  • Pour mixture into a greased loaf pan.
  • Bake for 1 hr to 1 hr 15 minutes.
  • When done let sit for 15 mins before removing from pan and placing on a wire rack.
  • Enjoy!

  2. This was a great recipe! It made well into bars in a jelly roll pan too! (recipe doubled and time shortened to 20-25 minutes) I didn't have any applesauce so I just added another apple with some brown sugar and made sure I mashed it a bit and left some chunky when I cooked down the apples. I also added a little clove and doubled the cinnamon too. It's a keeper! UPDATE: Noted next day the leftover bars were pretty sticky due to the sugar content I'm sure, but I had stored them in a tupperware and maybe it's a moisture control problem. I plan on making them on a eat-the-same-day basis. Too good to waste!
     
  3. Love that there is applesauce in this recipe, make for a really moist bread. And you're absolutely right about tweaking the ingredients, very easy to modify without risk! Had to take my cooking time down to about 50 minutes, but I think it's due to the non stick loaf pan...the outside tends to cook faster with the coating. Will be making this one again ofr sure! Fast, easy and verry yummy :)
