Jiffy Pudding

"If you're not counting calories, this is for you. It's rich, sweet, and easy to make and my favourite recipe. Serve it hot with ice cream, warm or cold, you decide. When you put it together you will think there is something wrong with the recipe but trust me, it works just fine. The recipe says to use a bundt pan but I found that a large casserole dish works better, as the bundt pan isn't large enough."

  • Cake:.
  • Preheat oven to 350 degrees (F). In a large bowl, beat sugar, butter, eggs, and jam together. Sift flour in mixture with milk. Mix baking soda and vinegar together and add to flour mixture. Pour in bunt cake pan and bake for 30 minutes.
  • Sauce:

  • Combine sauce ingredients in a heavy saucepan and boil very slowly for a few minutes. Pour over baked pudding. Return to oven and bake for another 15 minutes, then ready to eat.
  • Serve with vanilla icecream.
