Whole Grain Gingerbread Cake

"This is really good and relatively healthy. Serve it hot out of the oven with vanilla ice cream or whipped cream; it's also good with warm applesauce."

  • Stir dry ingredients (flour through wheat germ) together in mixing bowl.
  • Add remaining ingredients and beat until smooth.
  • Pour into greased 9x9 cake pan; bake at 350 for 45-50 minutes, or until tests done.

  1. Delish! I subbed 1/2 unsulphured molasses for half of the regular molasses, used 2 full teaspoons of cinn. & buttermilk substitute (milk & lemon juice) . This as a dense, moist bread with a very good taste. Tastes AWESOME with butter and honey!
     
  2. This is excellent! I followed it exactly, just using lowfat buttermilk. It made a beautiful cake that smelled and tasted wonderful. This is not a strong flavored gingerbread, but is lovely and lightly flavored. When I can get my 5 year old to eat this type of thing (usually he only wants to eat the chocolate type things I make) I am thrilled. We topped it warm with fat free cool-whip (the kids had sprinkles on theirs if I am to be truthful!) and it was really wonderful. Thanks for something so healthy and tasty at the same time!
