SALAD
- 2 large cucumbers, peeled and thily sliced
- 1 small onion, peeled and thinly sliced
- 3 small roma tomatoes, thinly sliced

DRESSING
- 1⁄3 cup low-fat sour cream
- 1⁄4 teaspoon Dijon mustard
- 1 tablespoon white vinegar
- 2 tablespoons low-fat milk
- 1⁄2 - 3⁄4 teaspoon sugar
- 1 tablespoon chopped fresh parsley
- 2 tablespoons chopped fresh dill
- 1⁄4 teaspoon pepper
- 1⁄4 teaspoon salt, to taste
directions
- Place the cucumbers, onions and tomatoes in a large bowl. Set aside.
- In a small bowl, whisk together all dressing ingredients. Pour over salad mixture.
- Toss to coat well.
- Chill at least 2 hours before serving.

This is so good. I would eat the sauce like a soup. Just the right amount of sweetness and acidity. I will eat this as a side to a steak, as an open faced sandwich on a crusty piece of sourdough, or a piece of toasted french bread with a smear of goat cheese.

We enjoyed the flavor of this salad. My salad came out ... foamy. The taste is delicious but the foamy texture was a little odd. Anyone else have this issue?

I can't stop eating this salad. I think it tastes better the next day. I've been eating it on avocado toast and can't get enough. Wish I would have made a double batch. Thanks for posting!

This was great for a potluck at my office that we had. There are a lot of Vegatarians at work, I set this down and it was gone in 5 minutes, should have tripled the batch!! I actually used malt vinegar since I was out of white vinegar, and it came out awesome!! Thanks for the recipe!!!!!

I didn't add a whole small onion, I only added a few slices of one; I am not a fan of raw onions.

This was a wonderful cucumber salad, plus I got to use cukes, tomatoes and fresh dill all from my garden. DH and I both enjoyed the lightly dilled dressing. I used splenda in place of sugar and wine vinegar instead of white vinegar - I'm looking forward to the leftovers at lunch today!
