- 473.18 ml sugar
- 354.88 ml oil (like canola or corn oil)
- 4 eggs
- 709.77 ml flour
- 9.85 ml baking powder
- 9.85 ml baking soda
- 9.85 ml cinnamon
- 2.46 ml salt
- 177.44 ml chopped nuts
- 4.92 ml vanilla
- 354.88 ml grated zucchini
- 354.88 ml grated carrots
directions
- Beat eggs, sugar and oil.
- Add sifted dry ingredients, zucchini, carrots, nuts and vanilla.
- Pour into a greased Bundt pan. Bake at 350 deg. for 45 min to 1 hour. The top will be golden and may crack a little -- that's okay!
- Let cool and sprinkle with powdered sugar.
