low calorie, easy pumpkin pie filling, can be eaten WITHOUT a crust.
- 1 (16 ounce) can pumpkin
- 1 tablespoon cinnamon
- 3 large egg whites
- 10 (3 g) packets Splenda sugar substitute
- mix all ingredients together.
- microwave for 1 minute on HIGH power.
- mix well
- microwave for another 20 seconds.
I eat this all the time! I microwave for longer time. I also sometimes add a dash of nutmeg. I love it, plus I get a lot of nutrients from the pumpkin.
I tried this one last year for my family of pumkin pie lovers! They actually liked this one better than the regular pumkin pie recipe!! Some of the family didn't even notice that I was eating it too, which shows that this is a great recipe!!
Nice recipe for an easy pumpkin treat. Very filling! I agree that this could have used some milk, even just a few tablespoons. And I definitely needed more cooking time, but I have a very low-wattage microwave so that could've been why. I crumbled a few gingersnaps on mine and those added a nice crunch to an otherwise mashed potato-ey texture. This will be a keeper for some pumpkin pie cravings!
