Tropical Stuffed Pork Roast

"I recently made a pork roast at a Make and Take place and loved it so I made up my own recipe to copy-cat it! It's a lovely flavor of slightly sweet with the juice meat. It's also very pretty and ridiculously easy to make. Enjoy!"

  • Slice open pork roast and place in a roasting pan.
  • Open roast like a book.
  • Combine stuffing ingredients and spread across the roast. "Close" the roast.
  • Cominbe the apricot preserves and thyme. Spread over roast.
  • Pour 1/4 c water in roasting pan.
  • Bake at 350 for 1 hour and 40 minutes, or until the internal temperature reaches 145 degrees.
