- 4 lbs boneless pork loin roast
- 2 tablespoons apricot preserves
- 1⁄2 teaspoon thyme
- 1⁄4 cup water

Stuffing
- 1 1⁄2 cups prepared seasoned stuffing mix
- 1⁄4 cup chicken broth
- 1⁄3 cup dried cranberries (Craisins)
- 1 tablespoon chopped onion
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon pepper
- 2 tablespoons apricot preserves
directions
- Slice open pork roast and place in a roasting pan.
- Open roast like a book.
- Combine stuffing ingredients and spread across the roast. "Close" the roast.
- Cominbe the apricot preserves and thyme. Spread over roast.
- Pour 1/4 c water in roasting pan.
- Bake at 350 for 1 hour and 40 minutes, or until the internal temperature reaches 145 degrees.
