- 1 head romaine lettuce
- 1 cucumber, thinly sliced
- 5 radishes, thinly sliced
- 1 red bell pepper, seeded and sliced
- 1 green bell pepper, seeded and sliced
- 2 large tomatoes, cut into wedges
- 2 scallions, chopped
- 1 small red onion, sliced
- 3 ounces feta cheese, crumbled
- 1⁄2 cup fresh parsley, coarsely chopped
- 1⁄2 cup black olives
- 2 tablespoons capers

Dressing
- 1⁄4 cup olive oil
- 1 lemon, juice of
- 1 tablespoon wine vinegar
- 1 garlic clove, pressed
- salt & freshly ground black pepper
- 1 pinch dried mint
directions
- Rinse the romaine, tear it into bite-sized pieces, and place it in a salad bowl.
- Arrange the other vegetables attractively over the romaine, topping with the feta, parsley, olives, and capers.
- Combine the salad dressing ingredients. Drizzle the dressing over the salad.

This salad sounds yummy but I don't think it is a Syrian salad, from the recipe it appears to be a Greek style salad. My hubby is Syrian. We did have Syrian salad tonight all it had in it was cucumber, tomato, onion, mint, lemon juice, olive oil and salt and pepper. A little parsley can be added as well but he didn't feel like it tonight. This one is good with lamb kabobs. Syrians eat certain salads with certain foods...
