I made this recipe as written. The 2 apples I used were Granny Smith. Instead of chopping them I peeled, cored, and then cut each apple lengthwise into 8 pieces. The recipe was easy to put together and had a lot of flavor. Leftovers freeze well. Thanks for sharing.

  1. Preheat the broiler in the oven. Place the roast in a roasting pan, brush with olive oil, sprinkle with thyme leaves (hubby not a fan of thyme, I used parsley), and season with salt and pepper.
  2. Place under the broiler for 10 – 15 minutes, until lightly browned in several places.
  3. Place 2 lbs of the sauerkraut in the slow cooker.
  4. Place the roast in the center over the sauerkraut, topped with apples.
  5. Optional: Add quartered red potatoes, and thin sliced carrots.
  6. Arrange kielbasa pieces around the edges of the crock.
  7. Cover with remaining sauerkraut.
  8. Cover. Cook on High for 6 hours.
