Rhubarb Tea Bread

- 3 eggs
- 1 cup oil
- 2 cups brown sugar
- 2 teaspoons vanilla
- 2 1⁄2 cups rhubarb, chopped
- 1⁄2 cup walnuts or 1/2 cup pecans, chopped
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon nutmeg
- 1⁄2 teaspoon allspice
directions
- Beat eggs until thick and foamy.
- Add oil, brown sugar, vanilla.
- Beat well.
- Stir in rhubarb, nuts.
- Add remaining ingredients.
- Mix well.
- Pour into two greased and floured loaf pans.
- Bake at 350° for one hour.

I found some frozen rhubarb in the grocery store so I thought it would be fun to try this bread.I've never tried rhubard before so I wasn't sure what to expect.I thought the bread had a really great flavor and it turned out very moist.I even subbed half the oil for applesauce.I just didn't think it was quite sweet enough.Next time I think I'll add a brown sugar topping to make it a little sweeter and also omit the nuts.
