  • 2 slices diced bacon
  • 1 tablespoon olive oil
  • 2 cups red potatoes, diced
  • 2 cups frozen peas
  • salt and pepper

directions

  • In a large skillet, combine bacon, olive oil and potato.
  • Cook over medium heat until potatoes and bacon begin to brown.
  • Cover and continue to cook 5 minutes or until potatoes are tender.
  • Stir in peas.
  • Cover and cook an additional 5 minutes.
  • Season with salt and pepper.

  4. I have made this dish several times. You can do so much with this recipe, I chose to add corn and onions to the one I took a picture of. So easy to make in no time. A family favorite of ours. I even chose to cook this on the grill while I was cooking steak on the other half .
     
  5. VERY good. My 2 kids, my husband and I all cleaned our plates (which is a rarity in our house!). This would be super with just about anything I can think of. Couldn't be easier NOR tastier. Thanks for posting!
