Pea Vegetable Salad (Christmas Relish)

- 425.24 g can baby green peas, drained
- 311.84 g can shoe peg corn, drained
- 56.69 g jar pimientos
- 236.59 ml finely chopped green pepper
- 236.59 ml finely chopped celery
- 236.59 ml finely chopped onion
- 118.29 ml diced cheddar cheese
- 236.59 ml sugar
- 59.14 ml oil
- 118.29 ml vinegar
- 4.92 ml salt
- 2.46-3.69 ml pepper
directions
- Mix sugar, oil, vinegar, salt and pepper in a saucepan and bring to a boil.
- Boil for a few minutes and remove from heat.
- Let cool completely.
- Combine all vegetables and cheese in a bowl.
- Pour cooled sauce over veggies and mix.
- Refrigerate. Best served cold!
- Note: Sometimes I use half of a green pepper and half of a red pepper. Chop peppers by hand, do not use chopper! And LeSueur peas work just fine.
