Directions

  1. Grate potatoes on the coarse side of grater into a bowl.
  2. Add egg, onion, lemon juice, coriander, salt, and pepper; mix well.
  3. Pour oil to about ¼-inch depth into a large skillet.
  4. Heat oil and drop the mixture by tablespoonfuls into hot oil.
  5. Fry over medium heat until nicely browned on both sides, 4 to 5 minutes on each side.
  6. Serve with salsa.
  7. ---To Prepare The Salsa---.
  8. Mix all ingredients together in a non-metal bowl.
  9. Cover and let stand for at least one hour to allow flavors to blend.
  10. Makes about 1½ cups.

Very delicious. I used to eat latkes only with apple sauce and never thought of making them savory. Since Mexican is one of my favourite cusines I loved these.

This is my new favorite Latke recipe. As Latkes tend to be a bit on the heavy, greasy, and did I say heavy side, a bit of freshness is a welcome addition. The Coriander/Cilantro is a breath of fresh air. I also evolved into adding about 1/2 tsp. red pepper flakes for a bit more Mexican "spice", and a little Matzo meal for tradition and "texture". I haven't tried the Salsa recipe with the Latkes yet, since I have my own that I'm pretty fond of. But a Salsa and these Latkes together is excellent. Two big, fat thumbs way up! :D
