- 3 1⁄2 lbs baking potatoes
- extra virgin olive oil, for brushing
- 1 lb bacon, cut into 1 inch pieces
- 1⁄2 cup butter, soft
- 1 pint sour cream
- 1⁄2 bunch scallion, thinly sliced
- 1 lb cheddar cheese, shredded
directions
- Preheat oven to 400. Pierce potatoes with fork, brush with oil. Bake one hour or until tender. Let cool, then cut into bite sized pieces.
- Cook bacon in skillet until crisp, drain.
- In a large bowl, combine butter and sour cream; season with salt and pepper. Stir in the potatoes, bacon, scallions and cheese. Serve at room temperature.

I live a low carb life, before I did a friend brought this to a picnic and I loved it. So I decide to make this a low carb recipe by changing 1 thing, potatoes for cauliflower. I cut up 1-2 heads of cauliflower and boil it in salt water for 5 minutes, then run cold water over cauliflower to stop it from cooking. My family and friends love it and I never have any left.

I just found this recipe in Rachael's most recent magazine and was checking here for it. I notice that Rachael's recipe calls for ONE POUND of cheese, rather than the one ounce listed in this recipe (could that be a typo?). I halved the recipe for my family of four, and I also plan to REHEAT the leftovers, as I think that would be mighty tasty, too! I left out the onions for this first go-round (as I have an onion-hating son), but will add them to the leftover version. As Rachael would say, "YumO!"

Just a college student trying to feed myself right! If I do say so myself, I might be catching up to my mom. She makes such WONDERFUL food but never ever wrote a recipe in her life. Growing up.. mom worked so hard (still does) and just didnt have time to show me how to cook. So I try to find recipes to recreate what I remember loving when I lived with them. I call her to ask how to make something and she says "well you know some of this, a little of that.." Oh mommmmm. :) She now frequently gives me the cooking reigns and I am honored. Would NOT be possible without all of the fantastic recipes on RecipeZaar! I attend UNCW here in Wilmington, NC. I hope to teach 5th grade one day soon! Cooking is so much fun to me I could spend hours looking for new recipes My boyfriend supports my habit as well, haha.
I wish I had more recipes to post that are original but as I said before.. I don't have very many. I am trying to experiment and come up with my own "style." I have gotten to be an expert grocery shopper! It's probably in my top 3 favorite things to do! Hah!
