Very simple & very tasty. It only takes 10-15 minutes to make, & serves 6.
- olive oil
- bacon grease
- 3 lbs red snapper
- white pepper, &
- 1⁄2 cup butter, melted
- 2 garlic cloves, crushed
- 1⁄2 lemon, juice of
- Heat large griddle to smoking point.
- Grease liberally with olive oil & bacon grease.
- Season & sear fish on both sides, turning carefully.
- Cook quickly for 3-5 minutes per side.
- Heat butter, garlic, & lemon juice to bubbling & serve over fish.
