Gerry's Meatloaf With Dill Pickle Sauce

"Yet another of dad's recipes. This is a slightly different meatloaf, than what most people are familiar with. Excellent served with rice, potatoes or broad pasta & fresh peas."

  • Preheat oven to 350°F.
  • Lightly mix meats with onions, bread crumbs, pickles, egg, salt and pepper until well blended.
  • Shape into a loaf and place in shallow pan.
  • Combine pickle juice, chili sauce or ketchup, water, sugar and Worcestershire sauce.
  • Pour over meatloaf and place in 350°F oven basting twice with sauce in pan for 40 minutes.
  • Continue baking without basting for additional 30 - 35 minutes, until meatloaf is really glazed.
  • Garnish with a pickle fan. Dad always served this with Brussels sprouts and tiny whole carrots.

  1. Thumbs up from my husband. I will mention one cooking method I used. I found the sauce to be a bit "loose", so I reduced it and then basted. Turned out nicely. I also grated the onion, as my husband doesn't care for chunks of onion in his meatloaf. Made for Everyday Holiday Tag Game. :)

  3. Fantastic! My compliments to your Dad and to you for sharing this recipe. Carly has re-named it the Whopper Jr. Meatloaf. Can't wait to have this as a sandwich tomorrow. Made as directed but my sauce never turned into a glaze but still a five-star recipe.

  5. BK if I could give this 10 stars I would. You receive 2 thumbs up from the whole table. Ds requested a meatloaf and yours is now the top of the list. I will make this often. I was concerned about the flavor of the pickle juice but let me say it added in that something special in each bite. I did try to get a picture on the plates but o one would not eat long enough for me to snap a shot. I will make this again and get one for your files. Excellent. Made for Aus/NZ Swap Jan 2010
