Garlic Herbed Mashed Potatoes (Bahama Breeze's Recipe)

- 453.59 g Red Bliss potatoes, 1/2-inch diced
- 14.79 ml garlic, chopped
- 29.58 ml scallions, sliced 1/4-inch 2 Tbsp
- 9.85 ml thyme leaves, chopped 2 tsp
- 59.16 ml butter
- 59.14 ml half-and-half (add more as needed to get right consistency)
- salt and pepper, to taste
directions
- Place a large pot half full with water and bring to a boil. Add the potatoes and boil for 15 - 20 minutes or until tender. Drain off the potatoes and add the remaining ingredients. Mash the potatoes using a hand masher and serve hot. ENJOY!

These are some winner potatoes my friend. The dh has requested them three times already and I am happy to oblige. They are so good...amazing flavors and textures. The potatoes are incredible, filled with butter, cream, thyme and garlic, creamy and savory. Wonderful served with homemade creamed corn or on their own. Really excellent potatoes. I made it without the 1/2 & 1/2 and still had wonderful flavor and an "almost" creamy texture. My spuds cooked up very moist and soft and I think I would have had soup if I had added more liquid. Without that addition I had a very nice mashed potato dish with great flavor and less calories (that worked for me, lol). The garlic and thyme make this stand out from the rest.

I don't like to cook things that require going to specialized grocery stores. I subscribe to several cooking magazines, that usually, require everyday on-hand ingredients. <br /><br />I am not very fond of most seafood, but do enjoy lobster, grilled shrimp and chilean sea bass. I won't cook anything with rosemary or curry, as I really don't like either herbs' flavor. And now from trying recipes, I found that I don't like dijon mustard, but love vinegar and mustard, not sure why I don't like the taste of dijon mustard.</p>
