Blueberry Sorbet

ingredients
- 2 pints fresh blueberries
- 2 1⁄2 cups sugar
- 1 1⁄4 cups cold water
- 2 lemons (freshly squeezed juice)
directions
- Make a simple syrup combining sugar and water in heavy saucepan; bring to a boil over high heat; reduce to medium-low heat and simmer, stirring until sugar has dissolved (6-8 minutes)-(** This step can be made ahead and kept refrigerated until ready to use).
- Cool completely.
- Combine blueberries, simple syrup and juice from 2 fresh lemons in food processor.
- Puree until smooth.
- Transfer puree to ice cream maker freeze according to manufacturer's instructions.
- Put into freezable container and place in freezer until firm.
- Makes 1 quart.

I agree with Logically Locked...definitely too sweet. That may have been partially due to some amazingly sweet blueberries...the best Ive had in years. While it was churning I tasted it and decided to turn it into sherbet and cut the sweetness. I added about 1/3-1/2 cup of heavy cream and its awesome.

Incredible flavor-easy recipe! I simmered the blueberries in the simple syrup (I think this intensifies the flavor) before cooling it. Once cool I added the lemon juice and put it all in the blender. It froze to a great consistency in my ice cream maker and was a big hit with my family. My aunt said it was the best sorbet she has ever tasted!
