- 1 cup diced bacon (about 3 strips)
- 1 cup diced celery
- 1 small onion, chopped
- 1 tablespoon salt (or less)
- 3 tablespoons all-purpose flour
- 1⁄3 - 2⁄3 cup sugar (or less depending on how sweet you like it)
- 2⁄3 cup vinegar
- 1⁄2 teaspoon fresh ground pepper (to taste)
- 1 1⁄3 cups water
- 8 cups sliced cooked potatoes
directions
- Set oven to 350 degrees F.
- Butter a 3-quart baking dish.
- Fry bacon; drain drippings from skillet reserving 1/4 cup.
- Add celery, onions, salt and flour.
- Simmer, stirring constantly.
- Add sugar, vinegar, pepper and water.
- Bring to a boil.
- Toss bacon and potatoes together in the baking dish.
- Pour celery mixture over top.
- Cover and bake for 30 minutes.

Sorry, but I'm fairly new at cooking and was wondering how many ounces of potatoes to use in this recipe. 8 Cups seems inadequate as wouldn't it depend on the size of the slices and/or the thickness of the slices. Would someone please clarify how many ounces or pounds of potatoes to use and does it matter what type of potato to use. Thank You!

Everything I have made by Kit cal has turned out excellent and this was the best German potato salad. I coupled it with another German recipe of Brussel sprouts, white beans, sausage, in a mustard cream sauce. I have made other German potato salads that have turned out dry, not this one, it was moist and delicious. If I were KitCal's neighbor I would be at her door every day at dinner time, scratching at the door. Meow!
