Peanut Butter Sheet Cake

ingredients
- 2 cups sugar
- 2 cups self-rising flour
- 1 cup butter
- 1 cup peanut butter
- 1 cup water
- 1⁄2 cup buttermilk
- 2 eggs
- 1 teaspoon vanilla

Icing
- 1⁄2 cup butter
- 1⁄2 cup peanut butter
- 1⁄3 cup buttermilk
- 1 teaspoon vanilla
- 1 (1 lb) box powdered sugar
directions
- Mix sugar and self-rising flour; set aside.
- Bring to a rapid boil 2 sticks of butter, 1 cup of peanut butter, and 1 cup of water.
- Pour over dry ingredients.
- Add to that 1/2 cup buttermilk, eggs, 1 teaspoon vanilla and then mix with mixer.
- Pour into greased 18" x 12" pan and bake for 25-30 minutes at 350 degrees.
- To make icing, bring to a boil 1 stick of remaining butter, 1/2 cup peanut butter, 1/3 cup buttermilk, 1 teaspoon vanilla; boil, add powdered sugar, mix well, and pour over hot cake.

Yes!! The cake is moist and easy. I had to make a lot of substitutions because I didn't have everything. I used 1c milk + 1tbs lemon juice for buttermilk. 1/2c egg beaters for eggs for self-rising flour I used 2c (minus 4tbs) all-purpose flour + 1/2tsp baking powder + 1 tsp salt. Wonderful, wonderful cake.

I think I did something wrong. My cake baked for forty minutes and I had to take it out because I was afraid it was going to start burning. The batter tasted yummy though. The frosting did not spread well, even on a cake right out of the oven. It set like fudge, but way to quick to spread right. Still, I got it done.<br/><br/>And hubby's huge tub of peanut butter he brought when we were married is almost gone. Yay! I think I'll have to buy more though, because I'm having a huge peanut butter craving lately.<br/><br/>Still with all these problems, it's a yummy cake. Thanks!
