- 1 (16 ounce) can pumpkin
- 1 tablespoon cinnamon
- 3 large egg whites
- 10 (3 g) packets Splenda sugar substitute
directions
- mix all ingredients together.
- microwave for 1 minute on HIGH power.
- mix well
- microwave for another 20 seconds.

Nice recipe for an easy pumpkin treat. Very filling! I agree that this could have used some milk, even just a few tablespoons. And I definitely needed more cooking time, but I have a very low-wattage microwave so that could've been why. I crumbled a few gingersnaps on mine and those added a nice crunch to an otherwise mashed potato-ey texture. This will be a keeper for some pumpkin pie cravings!

It is a GREAT idea...however, it tasted extremely eggy to me and slightly bitter from sugar substitute. The cooking time was also not enough in my microwave i had to almost double it. I ended up altering the recipe and adding some sugar free flavoring syrup and reduced fat soy milk. After the additions it tasted absolutely great and once again, I thank you for the idea :)
