White Bread - Bread Machine

"Classic simple white bread. Great for sandwiches & makes amazing toast.     I have a Cooks model 780-2159 bread maker. This recipe comes more or less right out their instruction manual. Bread mixes are convenient & always seem to work, but are really expensive. I buy my yeast by a pint jar rather than packets. The yeast will keep for years in the fridge. I buy my flour in 12lb size bags at member mega store. Preferably bread or 00 flour than general purpose. Making my purchases this way, I figure this loaf cost about 35 cents."

  • Proof the yeast: Put 1/4 cup of warm water into cup with 1 tablespoon Surgar and 2 teaspoons of yeast.
  • put dry ingredients into bread maker.
  • flour, salt, dry milk, Surgar, butter.
  • add water & finally the proofed yeast.
  • set bread maker on ‘basic’ recipe, 1 1/2 loaf, medium cook.
  • push ‘start’.
  • About 3 1/2 hours later you should have a beautiful loaf of white bread.
  • You need a high quality serrated bread knife to slice the finished loaf. Otherwise you get the squashed bread effect.

Tweaks

  1. Proofing the yeast means making sure it’s good. By testing it in a separate cup you don’t mess up you other ingredients if it turns out the yeast is dead.
