- 2 tablespoons olive oil
- 1 green bell pepper, chopped
- 1 red onion, chopped
- 1 (15 ounce) can condensed cream of chicken soup
- 5 cups chicken broth
- 1 teaspoon chili powder
- 2 cups cubed cooked chicken or 2 cups cubed cooked turkey
- 1 (15 ounce) can diced tomatoes
- 1 (15 ounce) can cut baby corn
- 2 tablespoons flour
- 2 tablespoons water
directions
- In a large saucepan, heat oil over medium heat. Saute bell pepper and onion until soft.
- Add condensed coup, broth, chili powder and meat. Bring to a boil and simmer 10 minutes.
- Add tomatoes (with juices) and corn. Stir flour into water until smooth. Add flour slurry to stew. Simmer 30 minutes and serve hot.

I love irony and this stew's origin. There was an old 1970's scifi pic called "Track of the Moon Beast". In the movie a native american feeds people on this stew and lists the ingredients in a scene. He didn't mention the canned soup, but it is a good add in. However to be authentic to New Mexico where the movies was filmed, it needs to also add hatch chilies. Easy to put together with ingredients you usually have on hand.
