Spicy Cranberry Chutney

- 8 cups fresh-frozen cranberries
- 2 minced shallots
- 2 seeded and minced jalapeno peppers
- 2 minced garlic cloves
- 1 1⁄2 cups brown sugar
- 1 1⁄2 cups sugar
- 1 1⁄2 cups red wine vinegar
- 2 tablespoons minced fresh ginger
- 2 tablespoons whole mustard seeds
- 1 tablespoon freshly grated orange zest
- 1 tablespoon freshly grated lemon zest
- 2 teaspoons salt
directions
- 1.Combine all ingredients in a large saucepan; bring to a boil over high heat. Simmer, uncovered, stirring often, until the cranberries have broken down and the mixture has thickened somewhat, 10 to 15 minutes. 2 .Let cool completely. Ladle the chutney into clean jars and refrigerate.
- Tip:.
- 1.Refrigerate chutney in an airtight container for up to 1 month. To can it for pantry storage.
- 2. Put it in boiling bath water for 10 minutes. cool and store.

Since I'm always trying out new cranberry recipes like this one (LOVE those tart red things!), I really had to cue this recipe in half, & probably should have done even less! Still a few neighbors & friends are appreciative of my gifting some of it to them, so . . . ! Now then, we really enjoyed the taste of this chutney, & I did use almost all of just 1 fairly large jalapeno pepper & also was a bit generous with my measures of the zest! That said, you have A GREAT CHUTNEY RECIPE HERE, & a definite keeper! [Made & reviewed in Newest Zaar tag]

<p>I moved to Alaska 22 year ago and Love it here. I drive school bus in the winter and cook for a fishing lodge during the summer. I have two kids, a boy that is 16 and a girl that is 12.
