  • 12 cup purchased pineapple-orange juice (or made)
  • 3 tablespoons lime juice
  • 1 12 tablespoons honey
  • 1 12 tablespoons walnut oil
  • 1 teaspoon balsamic vinegar
  • salt and pepper

  • Whisk all together.
  • Allow 15 minutes for flavors to meld.
  • Whisk before serving.

  1. I doubled this recipe and let people pour on what they wanted, since I was unsure if I'd have enough for a larger salad as written. Since I didn't have pine-orange juice, I drained some of the pineapple juice out of a can and added orange juice. This dressing is great on the spinach salad I make with mandarin oranges and sugared nuts. Tastes as good as dessert!
     
  2. Wonderful light tasting viniagrette! I made my own pineapple orange juice by using crushed pineapple with juice, some o.j. and some sugar. I love the blend of flavors in this, just light and flavorful. It was great on my spinach salad! Thanks Pebbles!
