- 1 envelope gelatin
- 1⁄4 cup water
- 1 ounce unsweetened chocolate
- 1⁄8 teaspoon cinnamon
- 3⁄4 teaspoon liquid sweetener
- 1⁄4 cup water
- 1⁄2 cup evaporated milk
- 1⁄2 teaspoon vanilla
- 1⁄4 cup chopped nuts
directions
- Soften gelatin in 1/4 cup water for 5 minutes.
- Melt chocolate with cinnamon and sweetener; add milk and water slowly.
- Add gelatin.
- Stir until dissolved.
- Remove from fire.
- Add vanilla, cool.
- When mixture begins to thicken, add nuts.
- Turn into cold pan.
- When firm cut into pieces.

I tried this because I love fudge..but I didn't like it, so I added 8oz of fat free cream cheese and whipped it and made a nice chocolate cheese cake. I chopped the nuts and sprinkled it over the botton of the pie plate and put the filling over it to add a little crunch instead of a crust. It came out nice, I enjoyed it, while everyone else was eating sugar something!!!

I'm married with three grown kids, 2 with little ones of their own - so I was a Grandma the first time at the ripe ole age of 39! Anyway that earth shaking event was 7 years ago and have added 3 more boys since then!
I have been cooking since I was 8 years old, learning a lot of recipes from an 1930's vintage Watkin's cookbook that my Aunt had - she has since lost the book - darn it - but I still have some of the recipes I copied from it.
