Crustless Cranberry Nut Pie

"This is a sweet/tart pie without crust. Extremely simple and delicious, this should ideally be served warm, with a scoop of ice cream melting on top."

  • Preheat oven to 325 degrees. Butter a 9" pie pan and layer cranberries on bottom. Sprinkle with brown sugar and nuts. In a bowl, beat egg until thick; gradually add sugar, beating until thoroughly blended. Stir in flour and melted butter; blend well. Pour over cranberries. Bake 45 minutes. Cut in wedges and serve warm with ice cream.

  1. Used some of the frozen cranberries that I always have around! Had the same situation as did the previous reviewer, but not to be concerned about it, I just more or less dropped small spoonfuls of the batter all over the top & that worked out just fine! Delicious with some frozen vanilla yogurt! Thanks for sharing the recipe! [Made & reviewed for one of my adoptees in this Spring's round of Pick A Chef]
     
  2. Made this for our Easter dessert. The batter portion of the pie was very thick and did not really pour. I had to spread it over the cranberries and nuts in the pie plate. I love cranberries and purchased extra bags for the freezer, so I will definitely give this another try. The next time I make it this for the family we will enjoy it warm topped with French vanilla ice cream. Made and reviewed for Spring PAC 2012.
