Black Bean Mango Salsa

- Ready In:
- 2 ripe mangoes, chopped
- 1 (16 ounce) can black beans, drained
- 1 red bell pepper, chopped
- 1 red onion, chopped
- 1⁄3 cup fresh cilantro, chopped
- 10 ounces frozen corn
- 1⁄4 cup lime juice (fresh is best!)
- 1 (1 1/4 ounce) packet good seasons Italian salad dressing mix
- Mix all ingredients until well blended.
- Refrigerate for at least 1 hour.
- Serve with tortilla chips or grilled chicken.

A nice, colorful salsa that is easy to make. I loved the sweetness from the mango, backed up by the zing of the cilantro. I rinsed the beans, as I did not want the dark color bleeding into the salsa. There are a lot of things I love about life, my family, my faith in God, my church family, my friends. I also enjoy so many hobbies. Working as a nurse means I work 3, 12 hour shifts a week and have 4 days off!
