ingredients
- 1⁄3 cup lime juice
- 1⁄2 cup olive oil
- 2 minced garlic cloves
- 1 teaspoon salt
- 1⁄8 teaspoon ground cayenne pepper
- 2 (15 ounce) cans black beans, rinsed and drained
- 2 (12 ounce) cans kernel corn
- 2 avocados, peeled, piited and chopped
- 1 red bell pepper, chopped
- 6 green onions, thinly sliced
- 1⁄2 cup chopped fresh cilantro
directions
- Mix together lime juice, olive oil, garlic, salt and cayenne pepper in a big bowl.
- Add all other ingredients, stir well and refrigerate.
- Serve cold with Tortilla chips.
