Bacon Wrapped Stuffed Pork Loin

"All I have to say about this is Yum-O! I usually used my grandmothers stuffing which consists of bread cubes, onions, butter and summer savory, but Stove top works just as well. I also use dried herbs, they work just as well as fresh. So easy to make people will think you slaved for hours ;)"

  • Preheat oven to 325°.
  • Slice pork loin lengthwise, but not all the way through, so you can still open it up.
  • Prepare stuffing and stuff into sliced pork loin.
  • Sprinkle top of pork loin with rosemary, thyme, salt & pepper.
  • Wrap pork loin with uncooked bacon slices.
  • Bake in oven until meat thermometer reaches 155F when inserted to the thickest part of the meat (where it's still attached on the side) approx one and a half hours.
  • Tent with foil for 5-10 minutes and slice.

  1. I found this recipe years ago. My son decided it rocked his face off. Hahaha. I changed it slightly. I made the stuffing but also made Rice-a-roni rice pilaf and stuffed that inside the stuffing with a piping bag. It gives the stuffing a surprise. But this is delicious. My children are grown now and all beg me to make this. So I do. Thanks for a great family meal!!
     
  2. This was excellent. Easy to prepare with outstanding results. Company-worthy! Thanks so much for sharing. My pork loin was just over 2 pounds and it fed 5 people so if you're cooking for more than 5, adjust accordingly.

Mom of 2, a girl and a boy who are 11 and soooo picky, neither of them like what the other likes so cooking is a chore! heh One's in the oven still baking ;) I'm due Dec '08. I'm also a step-mom to yet another 11 year old who has never eaten a sandwich and outright refuses to! I'm originally from Northern Ontario, but moved to Virginia 12 years ago for school. Two years ago I moved up to MA and got my first lesson on a gas stove, I've never had one ever! I would never go back to electric again lol 'Zaar has been such a lifesaver for me when it comes to recipes I've rarely had one that has ever failed the family...but there was this one time...heh Well I guess that's the short fast version...maybe one day i'll actually sit down and right a "real" about me page :)
