Meatloaf Muffins With Stove Top Stuffing

"This is very quick and easy to make. Kids love the "muffins". Also great for any of those anti-onion people in your home. You can make it with ground turkey to make it really healthy. I actually have a pan I drilled holes in to let the fat and grease drain out while cooking. We make these often. I got this recipe from a friend who was doing Weight Watchers at the time. Oh, and I half this recipe all the time. If I feel like loafs I just form those and bake a bit longer."

  • Mix all ingredients.
  • Spray muffin tins with cooking spray (Pam), esp for turkey.
  • Fill muffins tins to top.
  • Bake at 350°F for 35 minutes.

  1. We absolutely love these! It is my oldest niece's absolutely favorite dinner so this year she asked if I would make these for her birthday sleepover but she wanted to use the mashed potatoes on top as icing so that they looked like cupcakes! It was literally the cutest thing ever! The morning of her sleepover we started preparing everything together because she loves to help. Right before dinner time she started a movie for her friends and came in the kitchen to help with icing! We filled ziplock bags and cut the corner tip off and we tackled 30 meatloaf muffin cupcakes together! Even adding food coloring to some to make the potatoes different colors! The best part of all this was the time together with my niece and the memories we made together! Knowing that she will for sure do this as time passes and pass it down to the next makes my heart smile!
     
  2. Can this be made in a loaf pan? I'm sure there is a temp & time change. But,,, I Love MEATLOAF!!! And, secondly,,, I Love Meatloaf Sandwiches!!!

  1. These meatloaf muffins are so much easier than a standard meatloaf and a lot quicker to cook. They're perfect for a quick weeknight meal.
     
  2. Excellent meatloaf with the addition of 2 Tbsp of Ketchup and 1 Tbsp of Worcestershire Sauce as others recommended. We also added a glaze half way through cooking then continued to cook for the remainder of the time with the glaze. We did 1c of Ketchup, almost 1/2 c of brown sugar, 2 tsp of lemon juice and 1 tsp of coffee. Two of my kids who normally do not like meatloaf had seconds. My other kid who normally likes meatloaf, but never tasted this recipe had thirds raving it was the best meatloaf he has ever had. Will definitely make again, thanks for posting!
     
  3. These were wonderful! I used ground turkey, cut the recipe in half, added ketchup and worchestershire sauce and they were delicious! We're having the rest of them tomorrow night but I'm definitely making more of these and putting them in the freezer. Yummy!!!
     
  4. DH hated meatloaf until I made this recipe. His reaction, "you can make this as often as you like b/c it is delicious!" Definitely the reaction I was hoping for. Will be using this one over and over for many years to come.
     
  5. This was great!! Super simple, and very delicious! I added garlic, ketchup, and worchestershire sauce to my mixture. Served with garlic mashed potatoes, garlic green beans, and brown gravy. Even my picky 6 yr old and 4 yr old boys ate this. Thank you! I finally found a meatloaf recipe that is no-fail!

  1. I topped them with about a tablespoon of ketchup each before putting in the oven.
     
  2. We loved this recipe! It was cheap, easy, and quick - my three criteria for a weeknight dinner. :) I gave it 4 stars instead of 5 because we felt it could've used some tomato paste or ketchup in the actual mix to liven it up, and it took more like 45 minutes for the muffins to cook fully in my oven. Overall, we'll definitely be having these again!
