I used a recipe prior to this one with rice flour and AP flour, but using cornstarch is better, a pantry staple. I used only 10 -12 Oz of club soda, however. Consistency of heavy cream which I feel is just right. I would add more salt to the batter than recipe calls for too (assuming no other seasoning is used). It needs it.
