This was delicious. Better than I thought served with plain yogurt on the side. This has a cake like topping. I didn't make ours vegan but it turned out well. I used salted butter instead of the vegan butter, white rice flour, gluten free baking powder, guar gum to be corn free. I replaced the nutmeg with cinnamon because we don't consume intoxicants. I used real eggs and halal vanilla paste! (delicious stuff) Instead of stevia powder in the crust I used about 1/2 cup dark brown demura sugar. For the filling I rinsed canned peach slices, used freshly squeezed lemon juice and extra cinnamon, white sugar in maybe 1/3 cup and sea salt for the salt. Made for Zaar Chef Alphabet Soup Game (Jan - June '10).
