- 6 rice cakes
- 2 cups spaghetti sauce or 2 cups pizza sauce
- 2 cups mixed cheeses
- 1 cup turkey pepperoni
- 1 small onion, diced
- 1⁄2 bell pepper, diced
- 1⁄4 cup olive
- 2 teaspoons olive oil
- 1 cup parmesan cheese
directions
- In a small sauté pan place onions and bell peppers with two tea spoons of olive oil. Sauté’ until golden brown then place in a small bowl and set aside. Next take 6 rice cakes two at a time and place on a microwave safe plate and top with; sauce, cheese, bell pepper, olives, onions, turkey pepperoni, and parmesan cheese. Bake in the microwave for 3 to 4 minutes then serve with salad!
