Syritz - Slovakian Easter Cheese

- 20 eggs
- 3⁄4 cup sugar
- 1 teaspoon salt
- 1 1⁄2 quarts homogenized milk
- 5 drops yellow food coloring
directions
- Beat eggs, add remaining ingredients. Pour into large saucepan. Simmer, stirring frequently, until mixture curdles and gets watery (takes a long time!).
- Place cheesecloth or muslin in colander. Pour in cheese mixture. Squeeze tightly to remove as much liquid as possible.
- Tie tightly to form a ball. Hang ball until all moisture has dripped through (at least a few hours to overnight). Squeeze it occasionally. The tighter you tie it and the more you squeeze it, the better the cheese will form. When cool, remove cloth and cover in plastic wrap. Store in fridge.

<p>I'm a good ol' prairie girl from Canada with one side of the family being Ukrainian/Slovakian and the other side is German/Russian. In other words, when we cook we take carbs, cover them in more carbs, fry'em and serve it smothered in onions and cream. <br />No pro chefs in my family, just grandmas and aunts and cousins and a mom that had me pinching perogies and stuffing strudel before I could form a complete sentence. <br />The most dreaded / laughed at phrase I say is, So last night, I invented this thing for supper... - I would probably publish more recipes if I actually remembered everything I put in or had an idea of how much I added!!</p>
