- 1⁄2 cup shortening
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 1⁄2 cups all-purpose flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1⁄4 butter
- 2 tablespoons butter
- 1 (16 ounce) package powdered sugar
- 1⁄4 cup milk
- 1 teaspoon vanilla
- food coloring
directions
- Cream shortening; gradually add sugar, beating until fluffy.
- Add eggs and vanilla; mix well.
- Combine dry ingredients; add to creamed mixture, mixing well.
- Divide dough in half; wrap in wax paper, chill at least one hour.
- Roll half of dough to 1/4 inch thick on a lightly floured surface; keep remaining dough chilled. Cut dough with a cookie cutter.
- Place on lightly greased cookie sheet; bake at 350 for 12 minutes or until edges are lightly browned.
- Cool on wire rack.
- Cream butter; graduallly add sugar, beating until blended. Add milk and vanilla, mixing until smooth, Stir in food coloring, if desired.
- Spread on cookies.

These are great cookies. I'm not very talented at rolled cookies, but I was able to make some very nice cookies with this recipe. I had some left-over frosting in the fridge, so I used that rather than the icing in the recipe, so I can't provide any feedback on the icing, but we all liked the cookies very much.
