  • Preheat oven to 400°F.
  • Prepare stuffing mix according to directions.
  • Spray muffin cups.
  • Press 1/4 cup stuffing into bottom and up sides of 9 muffin cups.
  • Crack egg into each cup.
  • Sprinkle with bacon bits and cheese.
  • Bake 20 minutes or until yolks are set.
  • Let stand 5 minutes.

  1. Any news on how freezing worked? How long do they keep in the fridge? I would be preparing just for one person, my hubby. They do look incredibly wonderful.

  1. These were pretty good, I added hamburger and made a mushroom gravy (we love gravy). There were no leftovers
     
  2. well I went a bit extreme on these, I sauteed an onion and garlic before adding in the stuffing mix which really took these to another level, this made a wonderful weekday supper served with a side salad and was enjoyed thoroughly and was made for KK's Chef's Pick game, thank you Sus!
     
  3. These were very tasty and cute too! I loved how the eggs puffed up. The yolks are solid in this so it makes it convenient to carry off with you to work. I reduced the recipe in half but the full recipe would be great if you have several people over. Thank you Susan :)
     
  4. I used leftover homemade stuffing. The eggs overfilled the muffin cups a little, and the cheese slid right off! But these are awfully good, and very different. Next time I would try to get medium eggs. Great recipe! Made for KK Chef's Pick Tag.
