Spicy Beef Chili With Apples

I made a half recipe of this, but wish I had used the full amount of spices-we felt the dish was under-seasoned for our tastes. I was also not happy with the taste and texture after that final 10 minutes of cooking (I often cook my chili for a couple of hours) so cooked it a further 20 minutes. A good slug of tabasco lifted the flavour and I think some fresh coriander would also give the dish a boost. Thanks for posting a recipe that has plenty of promise though.

  1. In large saucepan over medium high, heat the oil. Add all the spices. Cook, stirring constantly for 30 seconds. Add the beef and cook until browned, about 6 minutes.
  2. Add the apples and onion, then saute for 5 minutes. Stir in the tomato paste, broth and vinegar and bring to a simmer. Cook, uncovered, for 10 minutes.
