These are very orangey, light and yummy! Toss with soba or ramen noodles for a light lunch or dinner.
- 12 ounces snow peas
- 1 carrot, julienned
- 1 tablespoon toasted sesame seeds
- 1⁄2 teaspoon sesame oil
- 1 grated orange, rind of
- 1 orange, juice of
- Steam the snow peas and carrots in the orange juice until tender.
- Transfer to a bowl and add sesame seeds, oil and orange rind.
- Toss to coat.
I made this as well for the ZWT Vegetarian Low Fat Challenge. I did reduce the amount of seeds by 1/2; however, felt that the amount of oil was minimal and eliminating it would greatly reduce the flavor of the recipe. Also, sesame seeds and sesame seed products have valuable health benefits. This is a great dish with lots of flavor and very attractive to serve.
I made your recipe as a main dish & served w/rice to satisfy the ZWT Asia Challenge. I reduced the fat content by eliminating the 1/2 tsp of sesame oil & decreasing the sesame seeds to 1 tsp. I added 1 tsp soy sauce & 1 garlic clove to intensify the Asian flavors & the outcome was a pleasant surprise. I had some initial concern all this chg might not be compatible w/the distincly fruit nature of the dish, but I needn't have worried as it was very good. Thx for posting.
